Description

Decadent yet nutritious brownies made with cottage cheese that satisfy your chocolate cravings while supporting your fitness goals.


Ingredients

  • 1 cup cottage cheese (or 1 cup silken tofu for dairy-free version)
  • 1/2 cup unsweetened cocoa powder
  • 1 cup almond flour (can substitute with regular flour)
  • 2 eggs (or 2 flaxseed eggs for vegan option)
  • 1/3 cup maple syrup (or sugar-free monk fruit syrup for keto-friendly version)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt (optional)
  • 1 cup dark chocolate chips (optional, use sugar-free if desired)

Instructions

  1. Preheat the oven to 180 °C (350 °F).
  2. Mix the cottage cheese (or silken tofu) with the eggs (or flaxseed eggs) and the maple syrup in a large bowl.
  3. Add the unsweetened cocoa powder, almond flour, vanilla extract, baking powder, and salt. Mix well until combined.
  4. Fold in the dark chocolate chips until evenly distributed.
  5. Prepare the baking pan by greasing it lightly or lining with parchment paper.
  6. Pour the brownie mixture into the prepared baking pan and smooth the surface.
  7. Bake for 25-30 minutes or until a toothpick comes out clean from the center.
  8. Let cool for at least 10 minutes before removing from the pan and allowing to cool completely on a wire rack.

Notes

Store the brownies in an airtight container in the fridge for up to a week. Reheat in the microwave for a warm treat.
