- 1 cup cottage cheese (or 1 cup silken tofu for dairy-free version)
- 1/2 cup unsweetened cocoa powder
- 1 cup almond flour (can substitute with regular flour)
- 2 eggs (or 2 flaxseed eggs for vegan option)
- 1/3 cup maple syrup (or sugar-free monk fruit syrup for keto-friendly version)
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt (optional)
- 1 cup dark chocolate chips (optional, use sugar-free if desired)
Instructions
- Preheat the oven to 180 °C (350 °F).
- Mix the cottage cheese (or silken tofu) with the eggs (or flaxseed eggs) and the maple syrup in a large bowl.
- Add the unsweetened cocoa powder, almond flour, vanilla extract, baking powder, and salt. Mix well until combined.
- Fold in the dark chocolate chips until evenly distributed.
- Prepare the baking pan by greasing it lightly or lining with parchment paper.
- Pour the brownie mixture into the prepared baking pan and smooth the surface.
- Bake for 25-30 minutes or until a toothpick comes out clean from the center.
- Let cool for at least 10 minutes before removing from the pan and allowing to cool completely on a wire rack.
Notes
Store the brownies in an airtight container in the fridge for up to a week. Reheat in the microwave for a warm treat.
