- 400g Halloumi, cut into 2cm cubes
- 1 red bell pepper, cut into 2cm pieces
- 1 yellow bell pepper, cut into 2cm pieces
- 1 red onion, cut into 2cm pieces
- 2 tbsp olive oil
- 1 tsp garam masala
- 1/2 tsp turmeric
- 1/4 tsp chili powder (optional)
- Salt and pepper to taste
- 2 tbsp olive oil or ghee
- 1 large onion, finely chopped
- 2 garlic cloves, finely chopped
- 1 piece ginger (about 2cm), grated
- 1 red chili, finely chopped (optional)
- 1 can (400g) diced tomatoes
- 2 tbsp tomato paste
- 1 tsp garam masala
- 1 tsp coriander powder
- 1/2 tsp cumin powder
- 1/4 tsp turmeric
- 1/4 tsp paprika
- 1 pinch sugar
- 200ml coconut milk (or cream)
- 100ml vegetable broth (or water)
- Juice of 1/2 lemon
- Fresh coriander, chopped, for garnish
- Salt and pepper to taste
- Basmati rice or naan bread
Instructions
- Prepare the Halloumi and vegetables by cutting them evenly into sizes.
- Mix the olive oil, garam masala, turmeric, chili powder, salt, and pepper in a bowl to create a marinade.
- Marinate the Halloumi and vegetable pieces for at least 15 minutes.
- Assemble the skewers by alternating Halloumi and vegetables.
- Heat olive oil or ghee in a pot and sauté the chopped onion until golden brown.
- Add garlic, ginger, and the red chili if using, allowing the spices to sizzle.
- Stir in the diced tomatoes and tomato paste, bringing to a boil.
- Incorporate the spices, allowing to simmer for 10 minutes.
- Pour in coconut milk and vegetable broth, simmering for 5-10 minutes until sauce thickens.
- Finish with lemon juice for brightness.
- Grill the Halloumi skewers for 2-3 minutes on each side until crispy.
- Combine the skewers in the sauce, stirring gently.
- Serve with basmati rice or naan, garnished with coriander.
Notes
You can prepare the marinade and vegetables the night before for convenience.
