Description

A flavorful Halloumi Tikka Masala with spice, warmth, and a hint of freshness, perfect for family dinners or cozy nights in.


Ingredients

  • 400g Halloumi, cut into 2cm cubes
  • 1 red bell pepper, cut into 2cm pieces
  • 1 yellow bell pepper, cut into 2cm pieces
  • 1 red onion, cut into 2cm pieces
  • 2 tbsp olive oil
  • 1 tsp garam masala
  • 1/2 tsp turmeric
  • 1/4 tsp chili powder (optional)
  • Salt and pepper to taste
  • 2 tbsp olive oil or ghee
  • 1 large onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 piece ginger (about 2cm), grated
  • 1 red chili, finely chopped (optional)
  • 1 can (400g) diced tomatoes
  • 2 tbsp tomato paste
  • 1 tsp garam masala
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1/4 tsp turmeric
  • 1/4 tsp paprika
  • 1 pinch sugar
  • 200ml coconut milk (or cream)
  • 100ml vegetable broth (or water)
  • Juice of 1/2 lemon
  • Fresh coriander, chopped, for garnish
  • Salt and pepper to taste
  • Basmati rice or naan bread

Instructions

  1. Prepare the Halloumi and vegetables by cutting them evenly into sizes.
  2. Mix the olive oil, garam masala, turmeric, chili powder, salt, and pepper in a bowl to create a marinade.
  3. Marinate the Halloumi and vegetable pieces for at least 15 minutes.
  4. Assemble the skewers by alternating Halloumi and vegetables.
  5. Heat olive oil or ghee in a pot and sauté the chopped onion until golden brown.
  6. Add garlic, ginger, and the red chili if using, allowing the spices to sizzle.
  7. Stir in the diced tomatoes and tomato paste, bringing to a boil.
  8. Incorporate the spices, allowing to simmer for 10 minutes.
  9. Pour in coconut milk and vegetable broth, simmering for 5-10 minutes until sauce thickens.
  10. Finish with lemon juice for brightness.
  11. Grill the Halloumi skewers for 2-3 minutes on each side until crispy.
  12. Combine the skewers in the sauce, stirring gently.
  13. Serve with basmati rice or naan, garnished with coriander.

Notes

You can prepare the marinade and vegetables the night before for convenience.
