Delicious and nutritious Korean rice balls filled with fresh vegetables and protein, perfect as a snack or light meal.
Ingredients

- 2 cups cooked rice
- 1/4 cup chopped vegetables (carrots, cucumbers, spinach, etc.)
- 1/4 cup tuna or tofu
- 1 tbsp soy sauce
- 1 tsp sesame oil
- Salt and pepper to taste
Instructions
- Place the cooked rice in a large bowl, ensuring it’s well cooled for easier shaping.
- Add the chopped vegetables, tuna or tofu, soy sauce, sesame oil, salt, and pepper.
- Mix all ingredients thoroughly with a spoon or your hands until evenly combined.
- Take a portion of the rice mixture and shape it into a compact ball with your hands.
- Repeat until all the mixture is used and arrange the rice balls beautifully on a plate.
- Serve the Jumeokbap warm or cold – both versions are delicious.
Notes
Optionally sprinkle with toasted sesame seeds for extra crunch. Great for meal prep and can be adapted with your favorite ingredients.
