- 200 g dry pasta (like spaghetti or penne)
- 100 g feta cheese
- 2 zucchinis
- 1 onion
- 1 tbsp olive oil
- 1 splash lemon juice
- Salt (to taste)
- Pepper (to taste)
- Nutmeg (optional)
Instructions
- Fill a large pot with water, add a pinch of salt, and bring it to a boil.
- Add the dry pasta and cook for 8-10 minutes until al dente, stirring occasionally.
- While the pasta cooks, chop the zucchinis and onion into small, even pieces.
- Heat the olive oil in a large pan over medium heat. Add the onion and sauté for about 2 minutes until translucent.
- Add the zucchinis and cook for 5-7 minutes until tender and lightly browned.
- Drain the pasta, reserving some cooking water.
- Combine the drained pasta with the zucchini mixture in the pan, mixing well.
- Crumble the feta over the mixture, add lemon juice, salt, pepper, and nutmeg. Stir in some reserved cooking water for a creamy texture.
- Serve immediately, garnished with extra feta and fresh herbs if desired.
Notes
You can prepare the zucchini and onion in advance and store them in the fridge to speed up the cooking time.
