Description

A delightful summer pasta dish featuring zucchini in a creamy sauce, complemented by feta cheese and a hint of lemon.


Ingredients

  • 200 g dry pasta (like spaghetti or penne)
  • 100 g feta cheese
  • 2 zucchini (fresh is key)
  • 1 onion (can be replaced with shallots)
  • 1 tbsp olive oil
  • 1 splash of lemon juice (freshly squeezed)
  • Salt (to taste)
  • Pepper (to taste)
  • Nutmeg (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente.
  2. While the pasta is cooking, prepare the zucchini by cutting it into small cubes or slices, as per your preference. Chop the onion finely.
  3. Heat the olive oil in a large pan over medium heat. Add the onions and sauté until soft and slightly translucent.
  4. Add the zucchini to the pan and sauté for a few minutes until lightly browned and tender but still crisp. (Tip: Stir regularly for even cooking.)
  5. Drain the cooked pasta and toss it into the pan with the zucchini and onions. Mix gently to coat the pasta in the flavors.
  6. Add the feta cheese and combine well. Let the mixture sit on low heat for 2-3 minutes to allow the flavors to meld.
  7. Finish the dish with a splash of fresh lemon juice, salt, pepper, and optional nutmeg. Stir well and serve hot.

Notes

You can prepare zucchini and onions in advance and store them in the refrigerator to save time on cooking day.
