Description

A delightful fusion of Polish pierogi and Italian lasagna, featuring creamy potatoes, melted cheese, and sweet caramelized onions.


Ingredients

  • 4 large potatoes, thinly sliced
  • 2 cups shredded cheese (mozzarella, cheddar)
  • 2 large onions, sliced
  • Fresh herbs (parsley or dill)
  • Optional: 1 cup cooked bacon, chopped
  • Optional: 1 cup mushrooms, sliced

Instructions

  1. Peel the potatoes and slice them thinly using a sharp knife.
  2. Sauté the onions in a pan until golden brown to bring out their sweetness.
  3. Layer the sliced potatoes in a baking dish, followed by a layer of cheese and then a layer of the sautéed onions. Repeat this process several times.
  4. Add fresh herbs, bacon, and/or mushrooms between the layers for added flavor.
  5. Top with another layer of cheese for a golden crust.
  6. Bake in a preheated oven at 180°C (350°F) for 40-45 minutes until the potatoes are tender and the cheese is perfectly golden brown.
  7. Let it cool for about 10 minutes before serving to enhance the flavors.

Notes

Prepare the lasagna a few hours in advance and refrigerate; it’ll taste even better the next day. You can also make it in an air fryer with adjusted temps.
