Description
A delightful fusion of Polish pierogi and Italian lasagna, featuring creamy potatoes, melted cheese, and sweet caramelized onions.
Ingredients

- 4 large potatoes, thinly sliced
- 2 cups shredded cheese (mozzarella, cheddar)
- 2 large onions, sliced
- Fresh herbs (parsley or dill)
- Optional: 1 cup cooked bacon, chopped
- Optional: 1 cup mushrooms, sliced
Instructions
- Peel the potatoes and slice them thinly using a sharp knife.
- Sauté the onions in a pan until golden brown to bring out their sweetness.
- Layer the sliced potatoes in a baking dish, followed by a layer of cheese and then a layer of the sautéed onions. Repeat this process several times.
- Add fresh herbs, bacon, and/or mushrooms between the layers for added flavor.
- Top with another layer of cheese for a golden crust.
- Bake in a preheated oven at 180°C (350°F) for 40-45 minutes until the potatoes are tender and the cheese is perfectly golden brown.
- Let it cool for about 10 minutes before serving to enhance the flavors.
Notes
Prepare the lasagna a few hours in advance and refrigerate; it’ll taste even better the next day. You can also make it in an air fryer with adjusted temps.
